What all these products offer – and what is so hard for your average home cook to create – is consistency . That honour falls to Waitrose’s Christmas shortcrust mince pies. Ditto custard; we all prefer Birds, including her. This is no reflection on her culinary prowess – on the contrary, her cooking is renowned – but simple proof of the uncomfortable truth that when it comes to Christmas, some things are just better shop bought.
This is partly because of the faff: these are fiddly foods, and unless you’re an experienced and enthusiastic cook, it’s hard to justify their effort to reward ratio in the chaos of Christmas. But mostly, it’s down to nostalgia and taste. The two are almost synonymous, thanks to the fact we process flavours in the brain’s prefrontal context – the area also responsible for memory-making.
This is not, therefore, a question of quality – not necessarily. Nor has it much to do with cooking ability. Yes, most people are not pastry-literate enough to make a decent mince pie case at home, but making stuffing is a doddle.
