It was time for change for one of Co Fermanagh’s best known restaurateurs as he tries to juggle two busy restaurants alongside getting to grips with fatherhood.
“We found a new space for Paget Lane so it’s going to have its own restaurant essentially,” Marty told MyFermanagh.“We will hopefully be moving Paget Lane in there in the new year, with a chef’s counter and it will be eight covers just for the night.Marty admitted the cost of living crisis has had an impact on his fine dining dream restaurant, with people not having the same money to spend on going out for dinner.
“It’s a lot to ask of people to come out and spend £200 on dinner, so what we were finding was around the middle of the month we were only half full. “I still very much want to pursue Paget Lane, I think it’s a great style of dining and it’s something that’s really different to what is in Fermanagh at the minute.”
While the pursuit of a Michelin Star had long been the top of Marty’s priorities, the arrival of his first child Rory four months ago has put things into perspective.“It doesn’t happen everywhere but I’ve seen my fair share of chefs in kitchens spending no time with their families and they are working nights and weekends.
