I made coronation chicken for the first time - what have I been missing all my life?
You either love it or you hate it, or - like me - it's a filling you've never dared to try because of its disconcerting appearance which seems all too similar to the contents of a poorly toddler's nappy. Although it's a staple on one of those sandwich platters you're presented with during the lunch break of a training day, it's always one I've shied away from.
I followed a BBC Good Food recipe which has just six ingredients. However, I did ignore one - the sultanas - because while I might be brave in trying coronation chicken for the first time I don't think I could stomach chewy sultanas in a sandwich.3tsps mild curry powderThe sight of the unmixed ingredients didn't exactly fill me with confidence.
Method This couldn't be easier. Mix together all the ingredients apart from the chicken and then add the chicken, mix again, and voila. I was a bit disappointed that I didn't have any salad in the fridge as I think this really calls for an added crunch.
