It may have started as a temporary pop-up project for chef Joe McLeod as a bit of an experiment. But now he is looking at bookings filling up until September.
Spring Cottage is set in the "special" wilds of Rivington on the Lancashire border, close to reservoirs and operates as an intimate wedding and cafe venue. Joe forages in the cottage's rural surroundings for "beautiful ingredients" in his cooking, and also uses as eggs from the roaming chickens. He became head chef at Ryan Giggs-owned George's in Worsley, before a period working as a private family chef, cooking three meals a day, six days a week. In 2020 and in the middle of a pandemic, he took the risk of setting up his own catering business Mcleod 9 Dining, preparing takeaway meals and delivering them across Chorley, Bolton and other areas of Lancashire.
"I'd even take my own pots, pans and crockery and make sure their kitchens were spotless afterwards. The the pop-up opportunity came up in March."
